Breakfast is by far my favorite meal of the day. Unfortunately, during the weekday, there isn’t always time to have a large and leisurely breakfast. I’m always looking for quick and easy recipes packed with flavor and protein to get me going through my day.

Lately, I’ve been on a bit of a toast kick; constantly trying new versions of this classic breakfast staple. My top three go-tos are avocado toast, banana raisin peanut butter toast, and jam & egg toast.

  1. Avocado Toast

Use a half an avocado and mash onto toast, season with salt and pepper. Add a healthy layer of fresh cilantro. Poach one egg, season and nestle on top. Sprinkle with cheese of choice: cheddar and feta are my personal favorites.

    2. Banana Raisin Peanut Butter Toast

Spread peanut butter on toast. Dice one banana into coins, and dip each slice into brown sugar. Melt coconut oil in skillet and add banana slices. Add raisins, one minced date, chopped almonds and cinnamon. Cook banana slices on each side until soft. Add banana mixture onto peanut butter toast and top with more cinnamon.

    3. Jam & Egg Toast

Use a cookie cutter to cut out the center of a slice of bread. Add bread to a skillet and add one egg to the center, where the hole is. Cook both sides evenly, until the egg is fully cooked. Spread toast with raspberry jam, add cheddar cheese and the bread center on top.
